🍔🐟✨ The Spirit of the Master: Shokunin
From the narrow, 700-year-old lanes of Kyoto’s historic Nishiki Market to a tiny, dedicated burger spot, there’s a hidden ingredient in every bite we took: Shokunin (職人).
Often translated as the spirit of the artisan, shokunin is a deep, lifelong devotion to mastering a craft. Dating back to 1310, you can still see this ancient value practiced daily by the market’s generational vendors, who treat sourcing and prepping local street food as a high art form.
That exact same dedication is why a classic cheeseburger is completely elevated in Japan. At Wagyu Tensho, the chefs approach the grill with the precision of a master craftsman. Meticulously balancing the premium wagyu blend, the toast of the bun, and the temperature of the flat top, they created what became Capt. Rob’s absolute favorite wagyu burger of the entire trip—scoring a perfect 10/10!
In Japan, no detail is too small, and no meal is “just fast food.”
