Keto Refried Beans

Still eating canned refried beans on keto? Let’s fix that.
These eggplant refried “beans” are smoky, creamy, and totally low carb—you won’t even miss the real thing.

Here’s what you’ll need:
✔ 1 large eggplant, peeled and diced
✔ 4 slices of bacon, chopped
✔ ½ small onion, finely diced
✔ 2 cloves garlic, minced
✔ ½ tsp smoked paprika
✔ ½ tsp ground cumin
✔ ¼ tsp black pepper
✔ ½ tsp salt (or to taste)
Optional: splash of heavy cream for extra creaminess

How to make it:
1. Cook bacon, then set aside (keep that grease!)
2. Sauté onion & garlic
3. Add eggplant and cook until soft
4. Season, blend, and enjoy!
