What I Eat in a Day ~ Gestational Diabetes ~ Insulin Dependent

I was diagnosed with gestational diabetes during my pregnancy. My endocrinologist immediately put me on night time insulin after looking at my logged blood sugar levels. I was very resistant at night when fasting, but not as resistant during the day. I struggled a bit trying to balance pregnancy hunger and a low carb diet. This video shows an example of what I eat in a day to control my gestational diabetes and keep my sugars in check.
