HOPIA MONGGO Fried vs. Baked versions

HOPIA MONGO is a soft flaky moon cake-like pastry filled with green mung bean or “mongo” & sometimes red bean.

✔️Ingredients
➡️Mongo Filling
1 liter water
3/4 cup green “mongo” [150 grams]
1 cup white sugar [200 grams]
1/2 cup flour [64 grams]

➡️First Dough
1/3 cup water (room temp) [80 ml]
2 tbsp white sugar
1/3 cup veg. oil (or lard) [80 ml]
1 & 1/2 cups all purpose flour [192 grams]

➡️Second Dough
1 cup all purpose flour [128 grams]
70 grams softened butter (or lard/shortening) [not melted]

🎛Frying time: 10-15 mins (no need for oil)
🎛Baking time: 30-40 mins or until brown @ 190C (baking time varies with oven specs, i’m using convectional oven with bottom flame only)
☑️you may also flip the bread evry after 10 mins during baking to cook both sides.
