Stuffed pickled cabbage rolls recipe with pork, veal and rice. Sarmale.
Learn how to cook stuffed sour cabbage rolls with pork, veal and rice. A family recipe passed from generation to generation. A traditional Christmas dish and other special occasions.
This is a complex dish, so if you are willing to try it, give it time and attention :) We do this several times during the year especially during holidays like Christmas and New Year's Eve.
As I travelled in Turkey and Greece a lot, my best guess is that this dish was inspired by the Turkish (sarmali) and Greek rolls (dolmades) and it was adapted to the Romanian environment and ingredients. It seems that many countries from East Europe have it, some with pickled sour cabbage, some with regular cabbage.
These are the ingredients for 100 small to medium cabbage rolls.
For the filling:
- sour cabbage (2 big ones)
- 1 kg of minced pork meat (this includes some fat)
- if you have the possibility to mince it at home buy 750g of pork leg (which has no fat) and add 400g of fat and mince it together with the meat
-750g beef leg (which has no fat)
- If you'd like the cabbage rolls juicier, just add more fat.
- Onions: 1/2 kg (the quantity before peeling it off)
- Round rice (NOT basmati): 200g
- Tomato sauce: 250 ml (or if you have the super-concentrated version - take 3 tablespoons and dilute them with a little bit of water)
- Vegetable oil: 100 ml
- Thyme: 1 teaspoon of dried thyme (or more if you like the flavour), or you can use fresh leaves
- Pepper: 1 teaspoon
- Water: as much as you need (check the video)
- Salt: Usually you don't need to add salt because the pickled cabbage is already salty. But it's best to taste it for salt. Test it while it's in the oven, so that all the ingredients come together.
For the pot, after creating the rolls:
- some pork fat
- some pieces of smoked pork meat
- some tomato sauce
- some thyme
- a few bay leaves
POFTA BUNA :) (which is "Have a good meal" in Romanian)
