Rocky Road Squares - Bonita's Kitchen

Welcome to Bonita's Kitchen!
Today we will be making Rocky Road Squares, made with chocolate chips, marshmallows and peanut butter. See recipe below!

Ingredients:

4 CUPS CHOCOLATE
4 CUPS MINI MARSHMELLOWS 
1 CUP SMOOTH OR CRUSHY PEANUT BUTTER
1 CUP CHOPPED NUTS OF CHOICE
1/2 CUP COCONUT

Method:

Line a 9x13-inch pan or 8” inch pan with parchment paper, cut to fit. Set aside.

Measure unsweetened chocolate chips into med saucepan, or melt in microwave for 2 minutes. Stir at low heat until melted.

Remove from stove or microwave then continue stirring until smooth.

Stir in peanut butter until evenly blended.

In a large bowl, mix marshmallows and nuts.

Then pour in the chocolate mixture and stir until just combined.

Evenly spread into pan and refrigerate until firm.

Sprinkle coconut over top. 

Put pan in fridge or freezer to set.

Then cut into squares, dipping your knife in warm water before cutting squares. 

After freeze until you are ready to eat them, or store in fridge.
