Detroit Style Pizza Recipe
For a 10 x 14 inch pan:
NOTE: This recipe is for 2 pizzas. Divide all these measurements in half if only making one pizza.

By Weight:

Bread Flour (100%): 495 g | 17.465 oz
Water (73%): 361.4 g | 12.75 oz
Rapid Rise Yeast (1.5% ) : 7.43 g | 0.262 oz | 2.47 tsp
Salt (1.75%): 8.66 g | 0.31 oz | 1.55 tsp
Honey (2%): 9.9 g | .35 g | 1.4 tsp | 0 47 tbsp
Total (175.75%): 882.545 g | 31.1 oz
Each Dough ball: 441.27 g | 15.56 oz

By Volume:
Bread Flour: A little less than 4 cups using the "dip and sweep" method
Water: 1 and ½ cups
Rapid Rise Yeast: 2½ teaspoons
Salt: 1½ teaspoons
Honey 1½ teaspoons

For a 8 x 10 inch pan:
NOTE: This recipe is for 2 pizzas. Divide all these measurements in half if only making one pizza.
By Weight:

Bread Flour (100%): 332.17 g | 11.4 oz
Water (73%): 235.9 g | 8.32 oz
Rapid Rise Yeast (1.5%): 4.84 g | 0.17 oz | 1.6 tsp | 0.34 tbsp
Salt (1.75%): 5.65 g | 0.2 oz | 1 tsp | 0.34 tbsp
Honey (2%): 6.4 g | 0.23 oz | 1 tsp | 0.3 tbsp
Total (175.75%): 576.1 g | 20.3 oz
Each Dough ball: 288. g | 10.15 oz
By Volume:
Bread Flour: A bit more than 2 and 1/2 cups using the "dip and sweep" method
Water: 1 1/3 cups
Rapid Rise Yeast: 1½ teaspoon
Honey: 1 teaspoon
Salt: 1 teaspoon

Sauce:

28 oz can crushed tomatoes
¼ tsp fresh ground black pepper
½ tsp salt
½ tsp garlic powder
2 tsp oregano
1/8 tsp (dash) crushed red pepper (optional, adds a zesty element)
Directions:

Dry ingredients: Put flour, yeast, salt into mixing bowl. Whisk mixture together.
Wet ingredients: Add water to flour.

Use paddle attachment on low setting to combine all ingredients, about 2 minutes. Remove excess dough from the paddle and form dough into a ball.

Cover the mixing bowl with a damp towel or paper towel and allow the dough to rest for 15 minutes.

Use the spiral dough hook or C-hook attachment and mix on setting 3 for 7 to 10 minutes or until the dough ball has just started to appear almost smooth.

Pour about 1 oz of vegetable oil into the pan. Flatten the dough ball to a height of about 0.5 inches using a vegetable oil on the finger tips if necessary, to prevent sticking. The dough will not completely fill the pan at this point.

Cover the pan and dough with a large cookie sheet or plastic wrap to prevent the dough from drying out. Allow the dough to rise for 2 to 4 hours.

Moisten the finger tips with vegetable oil and press the dough out gently from the center, toward the edges of the pan until the pan is completely filled with dough.

Cover the pan again and let dough rise for an additional 2 to 4 hours.

Preheat oven to 500 degrees.

Place the dough and pan into the oven, middle rack, and par bake the crust for about 5 to 6 minutes. Remove pan with dough in it from the oven. It should look dry and raw -- not golden brown or crispy at this point. Let the dough cool in the pan for about 30 minutes and cover the pan with a lid (cookie sheet) as it cools. (Once cooled, the dough can be stored for later use up to 10 hours if it is wrapped in plastic.)

When ready to bake , top the pizza with a 50/50 mix of shredded Monterey Jack and Mozzarella cheese. Be sure to put lots of cheese around the outer edges of the pizza as this is the cheese that will form the crispy rim that is the hallmark of Detroit style pizza. Add the toppings of your choice.

Turn down the heat and bake the pizza at 450 degrees on the middle rack for 15 to 20 minutes or until the crust appears golden brown and is cooked throughout. You may need to loosely place a sheet of aluminum foil over the pizza pan to prevent the cheese from becoming overdone during the last 7 or 8 minutes of the bake. Add 3 stripes of tomato sauce when the pizza has about 5 minutes left to bake. You may also add the sauce post-bake if you prefer.

Remove the pizza from the oven. Use a metal spatula around the edges of the pizza to free it up on all sides. Carefully remove the pizza from the pan and let it cool for several minutes on a raised cooling rack.

Place on a serving tray and cut the pizza into slices and enjoy!
