Homemade Mango Jam Recipe (Low Sugar) | What to Do With Too Many Mangoes

What do you do when all of your mangoes ripen at the same time?

We have two mango trees in our backyard in South Florida, and this year they decided to drop what felt like an endless supply of ripe mangoes all at once. Instead of letting them go to waste, we turned them into homemade mango jam and it ended up being the best mango jam we’ve ever had.

This easy mango jam recipe uses fresh mangoes, Splenda, and SURE-JELL Less or No Sugar Needed Pectin to create a sweet, spreadable jam with far less sugar than traditional recipes.

Yield
• 11 eight-ounce mason jars

Calories
• Approximately 65 calories per 8 oz jar

Ingredients
• 9–12 ripe mangoes (depending on size)
• SURE-JELL Less or No Sugar Needed Pectin
• Splenda sweetener packets
• Lemon juice
• Water

Equipment
• 11 eight-ounce mason jars with lids
• Large pot
• Blender or potato masher
• Ladle
• Kitchen scale (recommended)

Instructions

1. Prepare the Mangoes
• Peel the mangoes.
• Remove pits and any bruised spots.
• Blend or mash to your preferred consistency.

2. Combine Ingredients
• Add mango, water, lemon juice, and pectin to a large pot.
• Stir until fully combined.

3. Bring to a Full Rolling Boil
• Heat over medium-high heat.
• Stir frequently.
• Continue until the mixture reaches a full rolling boil that does not stop when stirred.

4. Sweeten
• Add Splenda packets to taste.
• Stir until dissolved.

5. Boil for One Minute
• Return the mixture to a full rolling boil.
• Boil for exactly one minute while stirring constantly.

6. Remove From Heat
• Remove from heat.
• Allow to sit for a few minutes.
• Skim off any foam if desired.

7. Fill the Jars
• Ladle jam into clean mason jars.
• Leave about ¼ inch of headspace.
• Wipe rims clean and secure lids.

8. Cool and Refrigerate
• Allow jars to cool.
• Refrigerate overnight.
• The jam will continue thickening over the next 12–24 hours.

How to Enjoy Mango Jam

This mango jam is delicious:
• Spread on warm toast
• Served over pancakes or waffles
• Added to oatmeal
• Paired with cream cheese and crackers

My favorite way to enjoy it is with nonfat plain Greek yogurt.

Simply:
• Add nonfat plain Greek yogurt to a bowl
• Sweeten with Splenda and a small drizzle of agave
• Stir until combined
• Top with a generous spoonful of mango jam

It’s a simple, high-protein breakfast that tastes like dessert.

South Florida Mango Season

Mango season in South Florida typically runs from May through September, with peak season occurring between June and August. If you have a mango tree, you know how quickly the fruit can pile up once it starts ripening.
