Simple & flavorful Tomato Chutney recipe, perfect as a side for dosa, idli, or even sandwiches

Ingredients:
• 2 tbsp oil (preferably sesame or vegetable)
• 1 tsp mustard seeds
• 1 tsp urad dal (optional)
• 2–3 dried red chilies (adjust to spice preference)
• 1 medium onion, chopped
• 2–3 garlic cloves
• 1-inch piece ginger (optional)
• 3–4 ripe tomatoes, chopped
• Salt to taste
• 1 tsp jaggery or sugar (optional, balances acidity)
• A few curry leaves (optional)

For tempering (optional, for extra flavor):
• 1 tsp oil
• 1/2 tsp mustard seeds
• 1/2 tsp urad dal
• A few curry leaves
• A pinch of asafoetida (hing)



Instructions:
1. Heat oil in a pan. Add mustard seeds, urad dal, and red chilies. Sauté until the dal turns golden.
2. Add onion, garlic, and ginger. Sauté until onions turn translucent.
3. Add chopped tomatoes and salt. Cook until tomatoes are soft and the oil starts separating (about 7–10 mins).
4. Add jaggery/sugar (if using), and cook for another 1–2 mins. Let it cool.
5. Blend the mixture to a smooth or slightly coarse paste.
6. Tempering (optional): Heat oil in a small pan, add mustard seeds, urad dal, curry leaves, and a pinch of hing. Pour over the chutney.
