Ingredients:
60 g unsalted butter, melted
60 g granulated sugar
2 tbsp golden syrup
2 tbsp brandy (or milk/vanilla extract for non-alcoholic)
60 g all-purpose flour
½ tsp ground ginger
Cooking Directions:
Preheat & Prep: Preheat oven to 160 °C (325 °F). Line a baking sheet with parchment paper.
Mix Wet Ingredients: In a bowl, whisk together melted butter, sugar, and golden syrup until sugar begins to dissolve.
Add Brandy: Stir in the brandy (or substitute) until fully incorporated.
Incorporate Dry Ingredients: Sift flour and ground ginger over the mixture. Gently fold until a smooth, glossy batter forms.
Portion Batter: Drop teaspoonfuls of batter onto the lined sheet, forming 6–8 cm rounds, spaced ~5 cm apart.
Bake: Bake 8–10 minutes, or until edges are deep golden brown—watch closely to avoid overbaking!
Shape: Immediately lift each hot snap with a spoon and drape over a rolling pin or bottle neck to form tubes. Let cool completely to crisp up.
