Crispiest Chicken (Recreating Mandy Lee's) & Truffle Fried Rice

Who doesn't like chicken? When I saw Mandy Lee's video I just knew I would give this a go. There are some pointers that you need to follow to get a good outcome.
1. Flatten the bird.
2. Make bird totally dry (Pat dry before and after it comes out of the fridge.
3.Use a non-stick skillet.
4. Pan should be big enough so bird can lay FLAT.
5.Cover partially
6.Turn the bird when it's golden brown and meat is almost cook through.

It did turn out great. The sound you heard on the video is real. Though I thought my bird didn't render as much fat as Mandy did on her video. Will I make the chicken again? Oh yeah! Maybe next time I'll use a smaller bird to make sure it has room to lay it really flat.

Truffle Fried Rice
1 tbsp Grape seed oil
2 Eggs
5 cloves Garlic
110g Mushrooms
3 cups Cooked Rice, long grain
1/2 tsp Chicken Powder
2 tbsp Truffle oil
2-3 stalks Spring onion
Salt & Pepper

Crispy Chicken
1 Whole Chicken
1/2 tbsp White pepper
1/2 Salt
3 cloves Garlic
5 stems Thyme
