Easy Quick & Tasty Lamb Curry Recipe (Fiji Indian Style)

Ingredients:

• 1 kg Lamb Pieces
• 2 Cups Hot Water
• 1 Medium Onion Chopped
• 4 Tbsp Of Oil
• 2 Sprigs Of Chopped Curry Leaves
• Salt To Taste
• 1/2 Tsp Cumin Seeds
• 1/2 Tsp Mustard Seeds
• 3 Tbsp Curry Powder
• 1 Tsp Turmeric
• 6 - 8 Garlic Cloves Crushed
• 1 Small Piece Of Crushed Ginger
• 1 Large Chilli Crushed
• 3 Medium Tomatoes Chopped

Method:

1) Put a pot on medium heat, add some oil and heat it .
2) When the oil gets hot, add onions, curry leaves and cumin and mustard seeds .Give a mix and cook it until the onions get a light brown colour.
3) Add the lamb pieces, salt to taste, turmeric, curry powder and chilli, (Or chilli powder to taste). Give it a good mix, put a lid on, lower the heat and cook it for 10 minutes stirring it twice during cooking.
4) After 10 minutes, add hot water, give it a mix, put a lid on leaving a small gap for the steam to escape, increase the heat to medium and cook it for 20 minutes or until most of the water is absorbed stirring it twice during cooking.
5) After 20 minutes, add tomatoes, ginger and garlic, give it a mix, put a lid on, lower the heat and cook it for 10 minutes.
6) After 10 minutes, taste your salt. Turn the heat off and garnish it with some fresh or frozen coriander leaves.
7) Enjoy with roti or rice.
