Ingredients
3 medium tomatoes, chopped.
1/2 red onion, chopped.
1-2 Jalapenos, chopped.
2 tbsp Cilantro, chopped.
2 cloves of Garlic, minced.
1 tbsp Lime Juice
1 tsp olive oil
salt and pepper to taste

Preparation
Chop up tomatoes, red onion, jalapenos, cilantro and place them in a bowl. Add minced garlic, lime juice, olive oil, salt and pepper. Mix ingredients thoroughly and refrigerate till ready to eat.

1 lb cooked chicken
4 stalks celery, sliced
2 Tbsp Mayonnaise
1 tsp lemon juice
1/4 tsp pepper
1 tomato, sliced
1 cucumber, sliced
Pita/Bread/Croissant

Preparation
Combine diced chicken with sliced celery, mayonnaise, lemon juice and pepper.
Place in pita pocket.
Add sliced tomato and cucumber
