Additional DETAILS from Dr. Howard Donner:
The pulse oximeter shines two beams of light through the finger. One beam is red light and the other is infrared light. The ratio of red to infrared light is used to determine the oxygen saturation.
Regarding being in good cardiovascular shape as related to avoiding altitude issues. The answer is ... being in top physical shape (or having a high level of cardiovascular fitness) helps with performance in all arenas but has no specific advantage for helping pilots adapt to altitude.
Incase the explanation of blood saturation was not clear enough: The bottom line is Oxygen saturation reflects the percentage of the total hemoglobin that is carrying oxygen.
