Mexican Horchata Spiced Rice and Almond beverage

Ingredients for 2-3 servings in a tall glass

1 cup long grained rice
1/2 cup whole almonds
4 cups clean drinking water plus more potable water to rinse
Sticks of cinnamon
Vanilla bean paste (optional)
Espresso shots (optional)
Cinnamon or nutmeg powder for dusting
Condensed milk if desired

Method
Wash rice and almonds in clean water. Put into a large bowl and top with 4 cups filtered drinking water. Cover and keep in a cool place or refrigerate for 24 hours.
Drain half the water and reserve.
Blitz the remaining water with the rice and almonds to a coarse slurry.
Drain this into the reserved water using a sieve and cheesecloth. Pour into a pitcher or jug.
Add cinnamon, vanilla and jaggery if desired. Stir well cover and refrigerate until cold. Pour over ice in a highball glass, garnish with a cinnamon stick, dust lightly with cinnamon or nutmeg and add espresso if desired. Chocolate syrup, nutmeg, condensed milk can also be added to this chilled drink. Keep refrigerated and consume within 48 hours.
