Bolognese Sauce
by Faith and Flour

1 large Onion, chopped
2 large Carrots, peeled and chopped
2 Tbsp Olive Oil
1 lb Ground Beef
1 tsp Salt
2 cloves Garlic
1 cup Red Wine
2 (28 oz) cans Fire Roasted Tomatoes (1 Diced, 1 Crushed)
1 (6 oz) can Tomato Paste
1-2 Tbs. Dried Italian Herb Blend
Fresh Basil

Sauté the onions, carrots, ground beef, garlic and salt in the olive oil until the onions are tender and the beef is browned.
Pour in the wine and cook for 5 minutes until slightly reduced.
Add the tomatoes, tomato paste, and dried herbs.
Stir well, bring to a boil and then reduce heat to low.
Simmer the sauce for 1-2 hours.
(The more patient you are the better the sauce!)
Stir in the fresh basil, salt and pepper to taste.
Simmer for and additional 10 minutes.
Serve over your favorite pasta.
Freezes beautifully!
