FOOD

easy baked cod with lentils and greens
1 lemon sliced, 2 cod filets, 1 cup cherry tomatoes sliced in half, seasonings of your choice (we like thyme and parsley), 2 cloves garlic, about 1/4 of an onion finely chopped, 2 tbs olive oil
mix everything together (i like to layer the cod between lemon slices)
roast at 400 degrees F for about 15 minutes (longer if your cod is thicc)

on the side I like baked potatoes, rice, or lentils on a bed of spinach and I drizzle the pan sauce from the cod on top along with extra herbs/ a lemon olive oil dressing if it's tasting bland.
