花旗參煲竹絲雞 Ginseng Chicken Soup
材料有竹絲雞, 軟骨,薑片,南棗, 花旗參,杞子,龍眼肉,紅棗Ingredients are whole black chicken, pork ribs, ginger slices, dried jujube, American ginseng, wolfberry, dried longan, red date
首先把雞內臟移除, 洗乾淨First remove the chicken Internal organs, wash it
軟骨需要用豆粉水洗淨Pork ribs needs to be washed with corn flour water
把雞和軟骨灼水Blanch the chicken and pork ribs with boiling water
把雞和軟骨拿起, 再清洗Pick up the chicken and pork ribs, then rinse again
藥材要浸水及沖洗乾淨The herbs should be soaked and rinsed
紅棗和南棗需要用豆粉水浸,及沖洗乾淨red date and jujube need to be soaked with corn flour water and rinsed with water
把水煮沸後, 便將所有藥材放進去After boiling the water, put all the herbs in.
加入薑片Add ginger slices
花旗參需要浸水較長的時間, 大概一晚American ginseng needs to be soaked for a long time, about one night

比較容易切片Easier to slice

放入雞和排骨Put in chicken and ribs
繼續煲Continue to boil
先用猛火煮沸, 然後再轉細火煮兩小時First, cook until it boils, then braise for two hours
煲兩小時以後, 加半匙羹鹽After cook for two hours, add half a spoonful of salt.
