PAKSIW NA TILAPIA RECIPE

This Paksiw na TIlapia recipe is a filling and colorful healthy fish dish made of tilapia, pork belly chunks, ginger, onion, garlic, pepper, eggplant, tomato, green chillies, water, vinegar, some sugar, fish sauce, and red chillies. Ingredients

1 kilo tilapia ( descaled )
2/4 kilo pork belly ( cut to chunks )
Ginger ( sliced )
1 medium onion ( sliced )
6 cloves garlic ( minced )
Salt and pepper to taste
2 small eggplant ( sliced )
2 pieces tomatoes ( sliced )
6 pieces green chillies
2 cups water
⅓ cup vinegar
1 tablespoon sugar ( optional )
Fish sauce to taste
5 red chillies
Steps:

In a pan, saute pork belly chunks till it fully changes into a light brown color. Or till the fats start to render.
Place in the tilapia, ginger, onion, garlic, salt, pepper, eggplant, tomatoes, green chillies, water, and vinegar. Cover and simmer for 10 – 15 minutes.
Taste. Add in sugar if needed, then add in fish sauce to taste. Place in red chillies and let this cook for a few minutes.
Serve over rice.
