Ingredients:

1 1/2 tbsp oil
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried rosemary
1 tsp sea salt
Black pepper red pepper flakes, to taste
1 medium (150 g) onion diced
2 stalks of (120 g) celery diced
1 1/2 cups (200 g) carrots diced
3 cloves of garlic minced
1/4 cup (60 ml) white wine (optional)
2 tbsp (50 g) tomato paste
2 (15 oz) cans chickpeas rinsed and drained (divided)
5 cups (1200 ml) vegetable broth
1 1/2 cups (170 g) dried ditalini pasta regular or gluten-free
Fresh parsley to garnish
Vegan Parmesan cheese to garnish (optional)
