Pot Pie Quesadilla Sweet Pea Guacamole
First, make the guacamole:
• 2 cups frozen thawed peas
• 1 handful parsley
• ¼ cup tarragon leaves
• 2 ripe avocados
• Juice of one lemon
• 2 cloves garlic
• 1 teaspoon cayenne pepper
• 1 teaspoon paprika
• Salt and pepper to taste
• Pulse peas, parsley, tarragon and garlic in food processor until smooth
• Transfer to a bowl.
• Add spices and avocado (Lesson for audience about removing avocado seeds and breaking down an avocado)
• Mash with a fork or potato masher
• Salt and pepper to taste
• Set aside
Next, pan fry some chicken --
• 8 chicken breasts
• Salt
• Pepper
• Vegetable oil
• Get pan hot, add vegetable oil.
• When hot, add the chicken.
• Pan sear until Golden brown, crusty, and delicious on one side, then flip.
• When really golden brown on both sides, check for doneness.
• If the chicken isn't really done, cut into smaller pieces and continue to cook.
Next, Make the Quesadilla filling --
• 1 small white onion, diced finely
• 1 chicken breast, shredded or diced
• 1 tbs minced fresh parsley
• 1 tbs minced tarragon
• 3 carrots, finely diced
• 1 cup cottage cheese
• 1 cup Jack cheese
• Salt and Pepper to taste
• Get pan hot, add vegetable oil.
• When hot, add the chicken
• Pan sear until Golden brown, crusty, and delicious on one side, then flip
• When really golden brown on both sides, check for doneness.
• Next, Assemble the Quesadilla -
• 10 inch tortillas
• Olive Oil
• Filling you just made
• Put oil in the pan and let it get warm, but not super hot (no burning tortillas)
Put tortilla into pan.
Working quickly, spoon filling onto half of the tortilla. Spread it with the spoon, leaving about an inch from the edges bare (for oozing).
Fold over tortilla. Press with back of spatula until the cheese is melty enough to hold it.
When the quesadilla is browned on one side, flip it carefully.
Cook until both sides are brown.
Serve with the green pea guacamole.
