Adjusting the pressure on a 2019 Gaggia Classic

On the 2019 model year Gaggia changed from a screw you tightened to control the OPV to a spring. Because the Gaggia Classic comes at 14 bar from the factory, optimal for pods not real espresso, you have to tune it down to 9 bar by adjusting the OPV. You can do this by cutting approximately 4mm of height off the spring (about 1 or 2 loops).

Make sure you only take off a little bit at a time and keep testing the pressure, it's hard to cut a spring longer! Also turn off the machine and let it cool, it gets hot in there!

For this you'll need a 10mm socket, good cutters that can get through a hardened spring, and a Philips screwdriver.
