Egg Washing Part 3 – Avoid soaking hatching eggs and use water hotter than 42 degrees celsius
Part 3 - There are several reasons to avoid soaking hatching eggs. Egg shells are not a solid barrier. An egg shell can have up to 17,000 pores that allow moisture and gas exchange to the embryo. During washing. the pores can also allow bacteria to enter the interior of the egg via capillary action if water temperature is too low. Using water higher than 42C will limit the transfer of bacteria from the shell to the inside of the egg.
