FRIED RICE PAPER SNACK

4 Sheets Rice Paper (22cm rounds or square-sheets)
4 Sheets Toasted Seaweed
2-3 Cups Oil for Frying
*Optional for dipping - your favorite instant ramen seasoning

Layout the seaweed on a clean table, parchment paper, or cutting board.
Fill a large bowl with warm water and quickly dip in one sheet of rice paper (1-2 seconds) to dampen.
Shake off excess water and place the rice paper on top of one sheet of seaweed.
Lightly press the two together and repeat with the remaining rice paper.
Let the rice paper/seaweed dry completely.
Mine took about 3 hours. Use a fan to speed up the drying process or prepare these the night before.
Once the sheets have dried, cut into strips or whatever shapes your heart desires!
Heat up the oil in a deep saucepan or wok on medium heat for 5-10 minutes. Dip in a wooden utensil and once you see rapid bubbles, the oil is ready for frying.
Fry the rice paper one-by-one or in batches. *Rice paper side down in the oil.
They only take 1-2 seconds to fry so work swiftly!
Drain on a paper towel and serve with a side of instant ramen seasoning!
Store leftovers in an airtight container.
