Best Hurda Party & Traditional Home Cooked Dishes of Vidarbha, MH I Pithla Bhakri, Galwani Chilva
Home cooked meals are always close to our hearts, aren't it ? So when our gracious hosts Sravan and Pallavi at Kaaram Food & Agro invited us to partake in two such meals with them, we were both grateful and super excited as it helps one connect with the culinary culture of a place.
The first one was a simple yet soul satisfying dinner presented to us by the gracious team on the same evening of our visit to their countryside farm whose day time experience features in our previous video. We started by snacking on some roasted sorghum grains called hurda along with masala chai. These are a favourite wintertime snacks in the villages. Roasting it and then bashing the grain out of the stalks was a fun thing to do. The nutty and crisp grains made for a delightful snack.
After this we learnt how to make pithla Maharashtrian kadhi and jowar bhakri, three most popular regional dishes that are a part of everyday meals. The recipes were quite simple, quick to make and low on spices. Once done we joined Sravan for the meal that consisted of the above three dishes and thecha or green chillies and garlic based condiment.
The thick, smooth and creamy textured and perfectly balanced pithla was deeply satisfying. It seemed as if we were having malai in a savoury form. The kadhi was very mild in flavours and went well with the bland jowar bhakri. In due course of eating we got go learn so many things about the food traditions of yhe place.
The following evening we visited our host Sravan's home to savour a few more Banjara dishes. The menu included chilva, galwani, rasse wale aalu bhaji, roti and lehsun ka thecha. Among these we witnessed the making of the first two quintessential Banjara dishes. Both entailed simple recipes. Chilva is a thin pancake made with jaggery and wheat flour based batter while galwani is a healthy drink made of ghee, little wheat flour, coconut, sugar and some warming spices. Together they make for an interesting pair. Over this meal we also discussed more about the story and vision behind the brilliant Kaaram Food & Agro enterprise.
