Banana Apple Nutty Snack Cake (Metric Version)
Prep time: 10 minutes
Bake time: 30–35 minutes
Makes: 1 loaf or small square cake
Ingredients
Dry:
130g self-raising flour
65g plain (all-purpose) flour
½ tsp ground cinnamon (optional)
Pinch of salt
Wet:
2 ripe bananas, mashed (about 200g peeled)
1 small apple, grated (around 100g)
2 eggs
60g peanut butter
60ml milk (any kind)
50–60g cream cheese (softened)
1 tsp vanilla extract (optional)
Mix-ins:
40g chopped dates
40g raisins
30–40g chopped mixed nuts
Instructions
Preheat your oven to 180°C (fan 160°C). Line a loaf tin or 20cm square tin with baking paper.
In a large bowl, whisk together: mashed bananas, grated apple, eggs, peanut butter, milk, and vanilla.
Gently stir in the softened cream cheese — leave it swirled or fully mix it in.
In a separate bowl, mix the self-raising flour, plain flour, cinnamon, and salt.
Add dry ingredients to the wet mixture and fold until just combined.
Stir in the dates, raisins, and nuts.
Pour the batter into your prepared tin and smooth the top. Optional: swirl a little extra peanut butter or cream cheese on top.
Bake for 30–35 minutes, or until golden and a skewer comes out clean.
Let cool before slicing into soft bars or squares.
