My FAT BURNING Break-Fast For Intermittent Fasting + NEW COOKBOOK

Chia Porridge + Raspberry Compote
Serves 2

Ingredients:
1/4 cup chia seeds
1/2 cup coconut cream (can use the top of a coconut milk can if there is a lot of cream, or buy this on it’s own)
1/2 cup coconut milk (from a carton)
Pinch of salt
1 10 z. Bag frozen raspberries
1 lemon, juiced
1 Tbsp. Chopped fresh ginger
1 Tbsp. peanut butter or almond butter (per serving)

Directions:
1. In a large bowl, combine the chia seeds, coconut cream, coconut milk and a pinch of salt. Whisk to combine and allow to sit for at least 30 minutes.
2. In a sauce pan over medium heat, add the raspberries, fresh ginger and lemon juice. Bring to a simmer and cook for 10 minutes, using your spatula or wooden spoon to press down on the raspberries and re- lease the juices.
3. Allow the compote to cool and store in a glass container.
4. Add 1/2 of the chia pudding to a bowl. Top with half of the raspberry compote and 1 Tbsp. Peanut or almond butter per serving.
