INGREDIENTS:
FOR CHHOLE:
* Chickpeas/Chhole (छोले) - 1 bowl
* Bay leaf (तेजपत्ता) - 1
* Cinnamon stick (दालचीनी) - 1 stick
* Black cardamom (बड़ी इलायची) - 1
* Small cardamom (छोटी इलायची) - 1
* Cumin seeds (जीरा) - 1/2 tsp
* Cloves (लौंग) - 5 pieces
* Salt (नमक) - some
* Baking soda (बेकिंग सोडा) - 1/4 tsp
* Oil (तेल) - 2 tbsp
* Cumin seeds (जीरा) - 1/2 tsp
* Dry Whole Red Chili (सूखी साबुत लाल मिर्च) - 2
* Asafoetida (हींग) - 1 pinch
* Green chili (हरी मिर्च) - 2
* Ginger (अदरक) - 1 inch
* Fenugreek leaves (कसूरी मेथी) - some
* Kashmiri Red Chili (कश्मीरी लाल मिर्च) - 1/4 tsp
* Turmeric powder (हल्दी पाउडर) - 1/4 tsp
* Tomatoes (टमाटर) - 3
* Potato (आलू) - boiled
* Salt (नमक) - as per taste
* Jaggery (गुड़) - 1 small piece
* Water (पानी) - as required
* Coriander leaves (धनिया पत्ती) - for garnishing
FOR POORI:
* Wheat flour (गेहू का आटा) - 1 cup
* All purpose flour (मैदा) - less then 1/2 cup
* Semolina (सूजी/रवा) - less then 1/4 cup
* Salt (नमक) - as per taste
* Oil (तेल) - 1 tbsp
* Baking soda (बेकिंग सोडा) -less then 1/4 tsp
* Curd (दही) - 3 tbsp
* Lukewarm water (गुनगुना पानी) - as required
* Oil (तेल) - for frying
FOR MASALA:
* Water (पानी) - some
* Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च पाउडर) - 1 tsp
* Red chili powder (लाल मिर्च पाउडर) - 1/2 tsp
* Black Salt (काला नमक) - 1/2 tsp
* Roasted Cumin Powder (भुना जीरा पाउडर) - 1 tsp
* Turmeric powder (हल्दी पाउडर) - 1/2 tsp
* Coriander powder (धनिया पाउडर) - 1 tsp
* Garam masala powder (गरम मसाला पाउडर) - 1/2 tsp
* Pomegranate seeds powder (अनार दाना पाउडर) - 1 tsp
* Mango powder (अमचूर पाउडर) - 1 tsp
FOR TADKA:
* Ghee (घी) - 2 tbsp
* Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च) - 1/2 tsp
RECIPE:
Soak some Chickpeas overnight and then boil them. Put some Bay Leaves, Cinnamon Stick, Big Cardamom, Small Cardamoms, Cumin Seeds, Cloves, Salt, and some Baking Soda while boiling the Chickpeas.
Boil some Potatoes and chop them in pieces and then keep the Potatoes and boiled Chickpeas aside.
For Poori Dough, Take some Wheat Flour, All Purpose Flour, Semolina, Salt, Oil, Baking Soda, and Curd in a bowl and mix them all. Then bind the dough with Lukewarm Water. Apply some oil on the dough then cover it with a wet napkin and keep it for 20-30 mins.
Then make the dough balls, apply some oil on the dough ball, and roll it. In this way roll all the Pooris and fry them.
For Chickpeas and Potato Curry, take a pan, put some Oil, Cumin Seeds, Dried Whole Red Chilies and Asafoetida and then put some finely chopped Green Chilies, Ginger, Dried Fenugreek Leaves, Kashmiri Red Chili Powder, Turmeric Powder and ground Tomato Paste in it then cook the Tomatoes properly.
Take some water in a bowl and put some Spices like Kashmiri Red Chili Powder, Red Chili Powder, Black Salt, Roasted Cumin Powder, Turmeric Powder, Coriander Powder, Garam Masala Powder, Pomegranate Seeds Powder and Mango Powder in it and mix them and put the Spices in the pan. Cook the Spices with the Tomato and put the boiled and chopped Potatoes, Salt, and a piece of Jaggery and cook it. Then put the boiled Chickpeas, Water, and some Coriander Leaves then cover it and cook it for 7-8 mins on slow flame.
In a Tadka pan, put some Ghee, heat it and then put some Red Chili Powder in it and put the Tadka on the ready Chickpea and Potato Curry.
In this way, very tasty Chickpea and Potato Curry with the Fermented Poori will get ready to serve.

* Mango powder (अमचूर पाउडर) - 1 tsp
FOR TADKA:
* Ghee (घी) - 2 tbsp
* Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च) - 1/2 tsp
RECIPE:
Soak some Chickpeas overnight and then boil them. Put some Bay Leaves, Cinnamon Stick, Big Cardamom, Small Cardamoms, Cumin Seeds, Cloves, Salt, and some Baking Soda while boiling the Chickpeas.
Boil some Potatoes and chop them in pieces and then keep the Potatoes and boiled Chickpeas aside.
For Poori Dough, Take some Wheat Flour, All Purpose Flour, Semolina, Salt, Oil, Baking Soda, and Curd in a bowl and mix them all. Then bind the dough with Lukewarm Water. Apply some oil on the dough then cover it with a wet napkin and keep it for 20-30 mins.
Then make the dough balls, apply some oil on the dough ball, and roll it. In this way roll all the Pooris and fry them.
For Chickpeas and Potato Curry, take a pan, put some Oil, Cumin Seeds, Dried Whole Red Chilies and Asafoetida and then put some finely chopped Green Chilies, Ginger, Dried Fenugreek Leaves, Kashmiri Red Chili Powder, Turmeric Powder and ground Tomato Paste in it then cook the Tomatoes properly.
Take some water in a bowl and put some Spices like Kashmiri Red Chili Powder, Red Chili Powder, Black Salt, Roasted Cumin Powder, Turmeric Powder, Coriander Powder, Garam Masala Powder, Pomegranate Seeds Powder and Mango Powder in it and mix them and put the Spices in the pan. Cook the Spices with the Tomato and put the boiled and chopped Potatoes, Salt, and a piece of Jaggery and cook it. Then put the boiled Chickpeas, Water, and some Coriander Leaves then cover it and cook it for 7-8 mins on slow flame.
In a Tadka pan, put some Ghee, heat it and then put some Red Chili Powder in it and put the Tadka on the ready Chickpea and Potato Curry.
In this way, very tasty Chickpea and Potato Curry with the Fermented Poori will get ready to serve.
