Quick And Easy All Purpose Gravy Or Masala recipe

This is a very quick and easy all purpose gravy to be used in all vegetables and lentils and breakfast also. it's very useful for working women. This gravy can be used up to a week or more as there is no or least moisture in this masala or gravy. you can prepare, it keep it in an airtight box and then refrigerate it.
For lentils or dal
After the initial tempering of asafoetida and cumin seeds in one spoon Desi ghee put this masala, turmeric and salt to taste, stir for a while and add boiled lentils. Cover it and cook for another 2 minutes, add chopped coriander and sprinkle some garam masala on it and your dal is ready.
For vegetables
After the initial tempering of asafoetida and cumin seeds in one spoon Desi ghee put this masala, turmeric and salt to taste, stir for a while, add chopped vegetables and half cup of water, stir, cover it and cook accordingly, sprinkle chopped coriander and A pinch of garam masala and your vegetable is ready.
I use this masala in upma, poha, vermicelli, oats and many more breakfasts too.

Ingredients
Roughly chopped big onions -4
Roughly chopped big tomatoes -8
Roughly chopped ginger -6 inches
Roughly chopped green chilies-4-6 according to taste
pealed garlic cloves- 20-25
Bay leaves- 2
Black cardamom- 2
Cloves- 8
red chili-2 tsp
Kashmiri red chili- 3 tsp
Dry Coriander powder- 4 tbsp
Whole spices powder-1 tsp
Asafoetida- 1 tsp (optional)
Mustard oil- 1 cup
Put all ingredients in hot oil in a woc on full flame. Roast it for 7-8 minutes on full flame, keep stirring and then roast further on medium to low flame for another 15-20 minutes to reduce the moisture.When it starts releasing oil then it's done. After cooling, keep it in glass containers and secure them in refrigerator.You can use this masala up to 15 days.
Preparation time- 10 minutes
Cooking time-35 minutes
