Do Cowboys really eat Cowboy Steaks with their bare hands ?

Cowboy Steaks refer to the cut of the steak, a 2 inch thick ribeye with a bone in. I am cooking mine sous-vide and then adding a sear last minute and drizzling with chimichurri sauce. Delicious !
