INGREDIENTS
2 Tbsp cooking oil
2 lb beef (sirloin, chuck, etc) cut in pieces
Juice of 1 lime
1-1/2 tsp of adobo, or to taste
1 tsp low sodium soy sauce, optional
2 tsp onion powder
Pinch of black pepper,
4 cloves of garlic, minced finely
1 tsp dried orégano or 1/2 tsp ground oregano
Water to braised beef (i used 2 cups; 1/2 cup at a time)
1/2 of a medium onion, sliced
1/2 of a cubanelle pepper, sliced
1/2 of a red bell pepper, sliced
4 Tbsp tomato paste
1-1/2 cups water
INSTRUCTIONS
1. In a large bowl, add meat pieces and season with chicken bouillon powder, onion powder, black pepper, lime juice, soy sauce, oregano and minced garlic. Mix together until all the ingredients are well blended. Marinated for better flavor, but is not necessary.
2. In a large pot ove medium high heat , add cooking oil and allow to get hot. Add beef and cook uncovered for 5 minutes. Lower heat to medium, give it a stir and cover and cook until the meat absorb its own juices.
3. When there’s no more juices in the pan, add 1/2 cup of water at a time and continue cooking the meat covered until is tender. If the meat is still not tender after it had absorbed the water, continue adding 1/2 cup water , repeat until is tender.
4. The meat was tender after 50 minutes with 2 cups of water used to braised (the time and water needed will depend on the cut of meat you use)
5. Once the beef is tender, add sliced onion and peppers, stir to combine. Add tomato paste and water, stir to blend everything well. Cover and cook for 3-5 minutes. Turn off hear and stir in chopped cilantro.
6. Serve with rice
