Part 2 of my epic dinner at Tamarind aboard Holland America Line’s Rotterdam! 🚢 After our rebellious first course, Angelo the Sommelier brought out a traditional pairing that was absolutely magical: sweet coconut-crusted scallops with a 2024 13 Celsius Sauvignon Blanc. The zippy, crisp citrus of the wine perfectly cuts through the rich coconut crust!
