🌟 Ingredients:
• 1 1/4 cup all-purpose flour
• 2 tsp baking powder
• 1/4 tsp salt
• 1 tsp cinnamon (optional)
• 1/2 tsp ground ginger
• 1/4 tsp nutmeg (optional)
• 1/2 cup pumpkin puree
• 1 egg
• 3/4 cup milk (dairy or plant-based)
• 2 tbsp melted butter or oil
• 1–2 tbsp brown sugar or honey (optional)

🔥 Instructions:
1️⃣ Mix dry ingredients (flour, baking powder, spices, and salt) in a large bowl.
2️⃣ In another bowl, whisk together pumpkin, egg, milk, oil, and sugar/honey until smooth.
3️⃣ Add dry ingredients to wet ingredients and stir gently just until combined.
4️⃣ Heat a non-stick pan and lightly grease it.
5️⃣ Pour 1/4 cup batter per pancake. Cook until bubbles appear, then flip and cook until golden brown.
6️⃣ Serve with honey, maple syrup, fresh fruit, or nuts and enjoy! 😋
