Remember when Taco Bell had the chilito or as it later became known, chili cheese burrito? Remember that? Let me start off by saying that this not only tastes like the original chilito (or for you youngins, Taco Bell chili cheese burrito) it's even better than the original. I would not lie about this.

This is not my recipe. At. All. This is Eric's from http://www.redbeansanderic.com. I copied it all the way, there was no need for any adjustments. Go and check out his blog, he's got some great food there, but this was just stand out.

This makes plenty guys, so be sure to use a big pot/skillet for this. You can freeze the leftovers. You can premake the burritos and freeze them to reheat later - I do 1:11, flip and do 1:11 again. You can pour it all over nachos. Use it as a party dip. Trust me, you'll find ways to use this and I'm sure it will become a reg in your meal rotation.

It seems many of you still have access to the Taco Bell chili cheese burrito (which again, is not as good as the original chilito and doesn't even touch this recipe). It's been many years since it's been offered where I live. But who needs it?!

TACO BELL CHILI CHEESE BURRITO RECIPE:

INGREDIENTS:
1 pound ground beef
1 diced onion
4 tablespoons chili powder
1 teaspoon cayenne pepper
1 teaspoon salt
2 cups water
6 ounces of tomato paste
1 can refried beans (16 ounces)
large tortillas
1 bag of cheese (8 ounces)

CORNSTARCH SLURRY:
2 tablespoons water
2 tablespoons cornstarch

ADD ONS IF YOU WANT:
sour cream
chopped onions
Fritos!

Brown up your meat and onion together until meat is cooked and the onion is translucent. If you have some fat left in the pan, drain it off. Add the chili powder, cayenne and salt. Stir it about and incorporate. (See that goodness?!!)

Stir in the water. Add cornstarch slurry. Just mix those the 2 tablespoons of water and cornstarch together in a ramekin and then add to the pot. Stir it about. Add the tomato paste and the can of refried beans and stir to combine. You want the beans to disappear and totally melt in. Add the bag of cheese, about 1/3 at a time time, incorporating it into the mixture each time.

Simmer on a medium/low heat for 10 minutes. Stir occasionally to prevent sticking. Now it's time to assemble!

I like to take my tortilla, wet my hand and rub it all over the tortilla, both sides. Pop it in the microwave for about 20-30 seconds, depending on your microwave. Place some in the middle, adding whatever you want on the inside and roll. I love onion and Fritos (Frilito) but others swear by sour cream. You do you! Dig in!
