Hamburger Soup

1 1/2 pound hamburger meat
4 medium red potatoes - washed
1 1/2 cups diced onions
1 cups diced carrots
1 cups diced celery
1 small can of V8 juice
1 15 can diced tomatoes + 1/2 can of water
1 15 oz can cut green beans, drained
1 15 oz can creamed corn
1 small can of sliced water chestnuts
1 teaspoon salt
3/4 teaspoon pepper
1 teaspoon Cavender’s Greek Seasoning (or seasoning of your choice)
6 tablespoons of butter
2 tablespoons of olive oil
Additional water to correct soup consistency

In large dutch oven, break up hamburger meat in enough water to cover meat. Bring to a low boil and cook until meat is no longer pink. Add potatoes and seasonings. Cook for 15-20 minutes, until potatoes are just barely tender.

While meat and potatoes are cooking, in 6 tablespoons of butter and 2 tablespoon of olive oil, saute carrots, onion and celery. When potatoes are tender, add these sautéed veggies to soup mixture. Add cut green beans, tomatoes and water, V8 juice, creamed corn, and water chestnuts.

Add additional water so that soup is not too thick. Let simmer until flavors have blended.
