In Sabosa Melbi and Kadayef cream without dairy products
Ingredients
The ingredients for the cake base
3 eggs
Half a cup of sugar (100 g)
Half a cup of vegetable cream (125 ml)
Half a cup of canola oil (125 ml)
Half a cup of almond flour (50 g ground almond powder)
3/4 cup flour (105 g)
3/4 cup semolina (105 g)
3/4 cup vegetable cream
Ingredients for cake syrup
Half a cup of tap water (120 ml)
1 cup sugar (200 g)
1 teaspoon of rose water extract
Juice from a quarter of a lemon
The ingredients for Malabi
900 milliliters of tap water
125 ml vegetable cream
100 grams of cornstarch
2 tablespoons of sugar
The constituents of Kadaiif
70g of Gaddafi noodles
40 grams of butter or naturina
1 cup sugar (200 g)
Half a cup of tap water (125 ml)
1 teaspoon of rose water
Juice from a quarter of a lemon
50 grams of shredded roasted pistachios
Instructions
Prepare the base - turn on a 180 degree oven. Sift into a 3/4 cup flour bowl. Add 3/4 cup semolina, 1/2 cup ground almonds to powder, stir and set aside. Put in a mixing bowl equipped with a 3 egg balloon and whisk at medium speed. Increase the mixer activity to a maximum and gradually add half a cup of sugar. Beat until light and fluffy. When you see the puffy and lightly batter pour in a thin stream of half a cup of vegetable cream, half a cup of oil and continue to whisk for a minute. Turn off the mixer activity, replace the balloon hook with a guitar, put in the mixer bowl, dry the mixers, mix for about a minute with the wet mass and stop. Scrape the bottom of the bowl and the sides to make sure the mass is of uniform texture. If the mass is not of uniform texture, mix it with the spatula. Transfer the mass to a medium format 20/30 cm or a 20/20 diameter pan and place in the oven for 35 minutes.
Prepare the syrup for cake - Put in a cup of sugar, half a cup of water, place on medium flame and cook until the sugar melts. Reduce the flame, add half the lemon juice, a teaspoon of rose extract, cook for another 2 minutes and turn off the flame. When the cake comes out of the oven, immediately pour all the syrup over it and set aside.
Prepare the melbi - Put in 900 ml water, 2 tablespoons sugar, 900 ml tap water, 125 ml vegetable cream, mix and place on medium flame. Stir non-stop with manual beater until thick and thick with bubbles. When you see a mass of bubbles stir another minute vigorously and turn off a flame. Pour the rectangle on the cake.
Prepare the Cadafif - Melt in the microwave 40 grams of butter, chop 70 grams of thin Cadafif noodles. Pour the compliment on the kadif and grease all the noodles. Place the Cadaf noodles on the cake and return to the oven for 25/20 minutes baking / until the Cadaf noodles are golden. Remove from oven and wait for cooling. Reduce the flame, add half the lemon juice, a teaspoon of rose extract, cook for another 2 minutes and turn off the flame. Pour the syrup onto the kadif and set aside to cool. When the cake reaches room temperature, wrap it in plastic wrap and transfer to the refrigerator for at least 10 hours. Before serving, sprinkle with grilled pistachios and coconut generously.
