Ingredients:

• 1 cup dry chickpeas (soaked overnight)
• ½ teaspoon baking soda
• 3 tablespoons tahini
• 2-3 tablespoons lemon juice (freshly squeezed)
• 1 garlic clove (peeled)
• 2-3 tablespoons olive oil (plus more for garnish)
• 2-3 ice cubes (for extra creaminess)
• ½ teaspoon ground cumin
• Salt to taste
• Optional garnishes: Paprika, chopped parsley, or toasted pine nuts

Instructions:

1. Soak the Chickpeas
• Soak the dry chickpeas overnight in a large bowl of water. Ensure they are fully submerged.

2. Boil the Chickpeas
• Drain and rinse the soaked chickpeas.
• Place the chickpeas in a pot, cover with water, and bring to a boil.
• Skim off the foam that rises to the surface, then add the baking soda.

3. Cook the Chickpeas
• Reduce the heat to a simmer and cook for 1–1.5 hours, or until the chickpeas are very tender.

4. Peel the Chickpeas
• Drain the chickpeas and remove their skins by gently rubbing them between your fingers. This step ensures a smooth texture.

5. Cool Down the Chickpeas
• Allow the peeled chickpeas to cool completely before using them in the food processor.

6. Blend the Chickpeas with Ice
• Add the cooled chickpeas and ice cubes to a food processor. Blend them together for about 10 minutes until the mixture is very smooth.

7. Add Remaining Ingredients
• Add the garlic, lemon juice, salt, cumin, tahini, and olive oil to the chickpea mixture.

• Blend again for another 10 minutes to achieve the smoothest texture possible.

8. Cool Before Serving
• Let the hummus cool down completely before plating or serving. This step enhances the flavor and texture.

9. Serve
• Transfer the hummus to a serving dish. Drizzle with olive oil and garnish with paprika, parsley, or pine nuts if desired.
