4 tablespoon veg oil
1 medium onion
3-5 cloves garlic
4 sprigs thyme
1 tablespoon tomato paste
3/4 teaspoon sea salt
1 bay leaf
2 tablespoon red wine vinegar
1 teaspoon pepper flakes
1 tablespoon golden brown sugar
1 1/2 cup chicken stock
