This is a PK Quick Tip: if you love roasted garlic (and who doesn't?) but don't love making it as part of a larger meal, use your sous vide to confit garlic in bulk and keep it in the fridge. This will give you sweet, nutty, mashable, creamy garlic cloves that can be dished out at a moment's notice. They're great on sandwiches, as part of a charcuterie board, or even as the basis for a pasta sauce.
