Welcome back! To get started the first thing we need is refried beans, I like to make them the night before and fry them the day of, if you don’t have the time, don’t fret your huevos rancheros will still taste great without them or another option is canned beans although fresh is best, they will do the job! Once my beans are ready and on standby I like to start frying my tortillas to make tostadas, make sure you fry them to a golden brown so they are sturdy enough to hold all of your delicious toppings. Once done frying your desired amount (serving size is usually 2 per adult) set them aside to cool until we need them.

To begin your sauce, in a large heated skillet on medium heat add about 2 tablespoons of oil or enough to cover the bottom of your pan. Begin by adding your 1/2 onion and sauté until translucent (2-3 min), next add your sliced or minced chile serrano and cook until soft (1-2 min), and then your garlic (4 cloves) until the garlic is fragrant. You can then add your chopped roma tomatoes (3-4 is recommended) and cook for about 2 min and then you can add about a cup of water or so to make your sauce more loose. Bring to a boil, then lower heat down to a simmer, add your seasonings, 1 tsp of chicken bouillon and 1/2 tsp of oregano, also taste carefully and season with salt n pepper to your liking. Keep in a low simmer and set aside to have ready once eggs are ready to be added.

To make your eggs, I like to use the same pan I fried my tortillas in, I fry my eggs but it’s up to your convenience and liking. Once you have your desired eggs, add them to your sauce to let them finish cooking in the sauce and marry the flavors. You can bring your heat up to a boil and then back down to a simmer as you begin to assemble your plate.

To make your huevos rancheros, begin by adding refried beans to your tostadas, top with your eggs and a little extra sauce on top. You can garnish with your desired toppings, I enjoy queso fresco, Mexican sour cream and some fresh cilantro for some freshness and a great look!
