Recipe for gluten-free Cheddar Bay sausage balls with Palmetto pimento cheese #holidaybaking

Around the holidays, our table gets a little fuller — and so does the list of people we’re cooking for. We’ve got gluten-free loved ones, and nobody should miss out on the goodness of the season.

These gluten-free Cheddar Bay sausage balls with Palmetto pimento cheese are rich, cozy, and every bit as good as the classic. Bonus: they can be made ahead and frozen, which feels like a small Christmas miracle.

RECIPE (Double Batch – Gluten-Free)
2 boxes gluten-free Red Lobster Cheddar Bay Biscuit Mix
2 pounds ground pork sausage
1½ cups Palmetto Pimento Cheese
¾ cup shredded sharp cheddar
6 tablespoons milk
3 tablespoons melted butter

Preheat oven to 375. Mix everything together (hands work best) until fully combined. If the mixture feels dry, add milk one tablespoon at a time. Roll into bite-size balls and place on a lined baking sheet. Bake 22–25 minutes until golden and cooked through.

Optional but highly recommended: melt a little butter, stir in the Cheddar Bay seasoning packets, and brush over the hot sausage balls right out of the oven.

Make-ahead tip: roll the balls, freeze on a tray, then bake straight from frozen when you need them — just add a few extra minutes.
