Boxing Day pasties – Jack Monroe
Christmas Day leftovers – make something more exciting than a turkey sandwich this year with these delicious Boxing Day pasties from Jack Monroe.
Recipe ingredients
For the pastry (don't forget, you can use shop-bought if you're short of time!):
125g lard
125g butter - plus extra for greasing
500g plain flour - plus extra for dusting
1 egg
Too much faff? Don't be afraid to buy shop-bought pastry – we won't tell if you don't.
For the filling – any quantity of the leftovers from the following:
Carrots, parsnips, broccoli, brussel sprouts, other veg, turkey, chicken, ham, pigs in blankets, gravy, cranberry sauce, apple sauce, stuffing...
Method
1) Preheat the oven to 180°C/350°F/gas mark 4.
2) Chop the butter and lard.
3) Pour the flour into a large mixing bowl and add the butter and lard. Rub together until you get a breadcrumb texture, then add cold water and mix to form a dough.
4) Divide the dough into four pieces, then cover and chill for 15 minutes. Meanwhile, take the leftovers and mix them together in a bowl - add a little of the wet ingredients (either gravy, cranberry sauce or apple sauce).
5) Lightly grease a baking tray and lightly flour your surface.
6) Take the pastry from the fridge and roll out one piece until about 1cm thick. Lay a large plate or bowl on top and cut around it to form a round shape.
7) Place some of the mixture into the centre and lift each side and pinch together with your fingertips. Pinch and fold the sides in and place on the baking tray. Repeat until you get your desired amount of pasties.
8) Beat an egg and brush onto the pasties.
9) Bake on the middle shelf of an oven for 45 minutes or until golden.
10) Serve 'em up – they're delicious hot or cold!
