Coconut Biscuits Recipe
Ingredients:
2/3 cup desiccated coconut
1/2 cup powdered sugar
2 egg whites
Instructions:
Grind the Coconut:
Add 2/3 cup desiccated coconut to a grinder and blend it into a finer texture.
Mix the Ingredients:
Transfer the ground coconut to a mixing bowl.
Add 1/2 cup powdered sugar and 2 egg whites.
Mix well until the mixture is well combined.
Cook on a Double Boiler:
Fill a saucepan with some water and bring it to a gentle simmer.
Place the bowl with the mixture over the saucepan (make sure the bottom of the bowl doesn’t touch the water).
Cook for about 5 minutes, stirring continuously, until the mixture thickens slightly.
Chill the Mixture:
Remove the bowl from heat and let it cool slightly.
Refrigerate for 30 minutes to allow the mixture to set.
Shape and Bake:
Preheat your oven to 160°C (320°F).
Grease a baking tray or line it with parchment paper.
Take small portions of the chilled mixture and shape them into cookies.
Arrange them on the tray, leaving space between each.
