How to make Armenian GATA/ Armenian Cuisine

Armenian Gata is one of the must-try desserts that you need to try while you are in Armenia. Each region in Armenia make gata in different ways. However, the most popular way to make gata consists of only flour, sugar, butter, eggs, and sour cream or an Armenian Yogurt known as matsun. In 2018
Armenian Gata was officially registered in the Guinness Books of Worl Records.

First of all, let's prepare the dough. For this we need; flour, butter, eggs, baking soda, salt, and sour cream.
We start by mixing the flour and butter until they are mixed well. In a separate bowl, we add 1tsp of baking soda into the sour cream and stir very well. Then we make a well in the center of our flour mix and we add the sour cream mixture in the center.
Next, we need to crack eggs on top of the sour cream. You need to knead until the dough becomes soft and all ingredients are mixed very well. You may add a few tablespoons of flour if necessary. When you finish kneading the dough, divide it into 3 equal bowls and cover it with and leave in the fridge for about 1 hour.

While the dough is resting let’s prepare the filling, which is known as Khoriz by locals. It consists of: flour, sugar, clarified butter or you can use regular unsalted butter, 1tsp vanilla extract.
For the filling or Khoriz: in a bowl add butter and sugar and give it a quick mix then add vanilla extract and slowly add in the flour. Stir it well until it becomes very crumbly. To know if the filling is ready, take it in the palm of your hands and press it close-if it comes together then you are on the right path.

Dough: Start to flatten one bowl into a round shape. In the middle add 1/3 of the filling and start to bring the edges close to one other. With the help of a rolling pin try to spread the dough. It needs to be about two centimeters thick. Using a fork, pierce the dough and then do the egg wash and create the design of your choice. We usually use a fork for the design.
Place it in an already preheated oven to 190 Celsius for 20-25 minutes until it gets golden.
For the dough in the other bowl, we will use another method. Using your hands start to flatten the dough and then take the rolling pin and try to make a big round shape, add the filling again 1/2, and holding from the edge’s role it. Next, use a rolling pin to gently flatten the roll. Be careful not to use a lot of pressure. Pierce it with a fork, brush the entire role with egg wash, create the design and cut into pieces.
When you are done, place it in the oven.

Ingredients: Dough
• 4 cups of all-purpose flour
• 1 teaspoon baking soda
• 1,5 packages of unsalted butter
• 400 g sour cream
• 1 pinch of salt
• 4 eggs
The Filling (Khoriz):
• 3 tablespoons clarified butter
• 1 cups of sugar
• 1 cups of flour
• 1teaspoon vanilla extract
