How to make BIKO PANDAN

INGREDIENTS:
2 cups glutinous rice
2 cups water
1 cup granulated sugar
1 1/2 cups coconut milk
2 tsp pandan essence. (Add green food color if essence is clear)
1 can coconut cream for latik topping
Banana leaf for lining the tray (optional)
HOW TO MAKE BIKO PANDAN:
Rinse the rice until water runs clear.
In a pot, boil the rice and water. ( You can also use a rice cooker to do this procedure.)
Bring to a boil, stir then cook in low heat for about 10 minutes. Set aside.
In another pot, combine coconut milk, sugar and pandan essence. Simmer until thick.
Add the cooked rice. Cook in low heat white stirring constantly until the rice mixture is almost dry and very sticky for about 15-20 minutes.
Remove from heat.
Transfer to a serving tray lined with banana leaves and flatten the surface. (I used a 9" round glass pan)
Top with latik.
Enjoy!
Recipe makes 6-8 servings
*** If you will be using banana leaf, make the banana leaf pliable by placing and running the leaf on open flame of stove. Heat up the leaf quickly as it changes color on both sides. Make sure not to burn the leaf and your hand as it is an open flame. I like using my hand doing this but I suggest to use a food tong for safety.
