Namak Pare Recipe or Masala Kaju (cashew nut)
This is a simple snack recipe using minimum ingredients. Namak Para is a fried snack eaten across Northern India.
And masala kaju happens to be the same snack cut in the shape of cashew nut or half moon. The key to a good masala kaju is to fry them on low heat to begin with and then crease the heat. And the second is to make a chatpata masala to toss the kaju in it.
This recipe is a crisp version and not a flaky version. They puff up and become crispy while frying.
There is also a sweet version which is called Shakkar pare. Namak para & Shakkar para are popular snacks made during winters. Namak Pare is also known as masala Kaju namkeen.
You can make them in bulk and store them in an airtight container and enjoy them with tea for the next few weeks.

Ingredients
Masala Kaju Namkeen
Makes – 400gms
Ingredients:
All-Purpose Flour (Maida) – 300gm/ 1¼ cups
Salt – ½ tsp
Baking powder – ½ tsp
Baking soda – ½ tsp
Ajwain – ½ tsp
Ghee/Oil – 75gms/⅓ cup
Water – 150ml/ ⅔cup
Oil – for frying
For Masala -
Black salt – 1tbsp
Salt – ½ tbsp
Black pepper powder – ¾ tbsp
Amchur (dry mango powder) – 2tbs
