This 30-minute Chicken and Vegetable Broth is a deeply nourishing, one-pot meal. It combines tender chicken, earthy mushrooms, crisp capsicum, and sweet carrots in a rich, savory broth. Perfect for a hearty weeknight dinner or a cozy lunch.

Servings: 4 Ingredients 500g (1 lb) boneless chicken (breast or thighs), cut into bite-sized pieces200g (7 oz) mushrooms (cremini or button), sliced 1 medium capsicum (bell pepper, any color), diced 2 medium carrots, peeled and diced 1 medium onion, chopped 3 cloves garlic, minced 4 cups chicken broth (or water with chicken bouillon)2 tbsp olive oil or butter 1 tsp dried thyme or Italian seasoning Salt and freshly ground black pepper to taste
Optional: 1 tbsp soy sauce and 1 tbsp cornstarch (for a slightly thicker, stir-fry style gravy)Instructions1. Sear the ChickenHeat the olive oil or butter in a large pot or Dutch oven over medium-high heat. Season the chicken pieces with salt, pepper, and your dried herbs. Add the chicken to the pot and sear until golden brown on all sides (about 5-7 minutes). Remove the chicken and set aside on a plate.
2. Sauté the AromaticsIn the same pot, add the chopped onion and sauté for about 3 minutes until it becomes soft and translucent. Add the minced garlic and cook for 1 more minute until fragrant.
3. Add the VegetablesAdd the diced carrots and sliced mushrooms to the pot. Sauté for about 5 minutes, stirring occasionally, as the mushrooms begin to release their moisture. Add the diced capsicum and cook for 2 more minutes.
4. Simmer the BrothReturn the seared chicken back to the pot. Pour in the 4 cups of chicken broth (and soy sauce, if using). Bring the mixture to a gentle boil.
5. Cook to Perfection Reduce the heat to a low simmer, cover the pot, and let it cook for about 10–15 minutes, or until the carrots are tender and the chicken is fully cooked through.
6. Thicken and Serve If you prefer a lighter, clear soup broth, you can serve it immediately.
If you prefer a richer, thicker broth, mix the cornstarch with 1 tbsp of cold water to create a slurry, stir it into the boiling broth, and let it simmer for 2 minutes until thickened.
Serve hot in bowls, and enjoy with crusty bread or steamed rice!
