Back Country Cheater's recipe #1: Quick and Dirty Rice

Fifty years of back country camping have taught me a few things. One of them is a whole bunch of recipes that don't require any, or at least minimal, refrigeration. I call these recipes "Back Country Cheaters" because you are getting amazing meals with minimal preparation and minimal space taken up in your cooler. Give these recipes a try and you might become known as a camp cook genius. (No need to tell them you cheated, eh?)

Recipe:
Back Country Cheater
Quick And Dirty Rice
(Only 5 ingredients. Nothing refrigerated but the meat.)

Ingredients:

1 lb ground beef
1 cup instant brown rice
1 10.5 oz can vegetable beef soup
1 ½ soup cans of water
1 15 oz jar mild salsa (optional. See note.)
½ onion – diced small
½ bell pepper – any color – diced small
1 tsp salt
1 tsp chile powder
1 tsp garlic powder
½ tsp black pepper
½ tsp cayenne pepper – optional (if you want to add a little heat to it)

Making:

Using a 10” skillet, brown the ground beef and drain the grease.
Pour in the soup and 1 ½ cans of water. Bring to a simmer and add the seasonings, onion, peppers and rice. Give it a good mix. Cover and simmer 20 minutes, or until rice is tender, stirring occasionally. When rice is done, remove from heat, stir well and serve.

Note:
If you want it even easier, replace the onion, pepper, seasonings and salt with a 15 oz jar of mild salsa. Reduce the water to one can if you do it this way.
If you really don’t want to use anything from the cooler, you can buy 16 oz cans of precooked ground beef from Amazon.com. No cooler needed at all. It doesn’t get any easier than that!
