Serves 2.

For the rice:

• 1/2 onion, finely diced
• 2 tsp garlic & ginger paste (or 1 tsp fresh ginger and 1 garlic clove)
200g frozen mixed vegetables
■ 3 large eggs
■ 1 pouch pre-cooked brown rice (no need to microwave)
• 150g cooked king prawns
■ 1-2 spring onions, sliced

For the sauce:

■ 1 tbsp soy sauce
• 1/2 tsp rice vinegar
• 1/2 tsp fish sauce (optional)
■ 1 tsp sesame oil
• 1/4 tsp (white) pepper

1. Heat 1 tbsp oil in a pan over medium heat. Add the onion and cook for 2 mins until slightly softened. Then, add the garlic & ginger paste and continue cooking for another 2 mins.

2. Tip in the frozen veggies and stir to coat in the paste. Cook for 2-3 mins.

3. Using your spatula, push the veg mix to the side and crack the eggs into the space left in the pan.

Gently scramble the eggs with your spatula and,
once cooked, incorporate the eggs in with the veggies.

4. Empty the pouch of rice into the pan (no need to microwave it first, as we'll cook it in the pan) and stir to combine with the veggies.

5. Add the ingredients for the sauce directly into the pan and once again stir to combine.

6. Add the cooked prawns and continue stir-frying for a few minutes until the prawns and rice are warmed through.
