Trucker's Kitchen: Chicken Spinach Mushroom Alfredo

Yes it is 100% possible to eat health while being an over the road truck drive. It just takes a bit of planning and thinking! This meal is a one pot chicken spinach mushroom alfredo. Then only thing we used to cook the meal was our electric skillet.

We went heavy on the mushrooms, spinach and chicken and lite on the gluten free noodles.
